The cotyledons of shiitake mushrooms are solitary, subordinate or in groups, with medium to slightly large cotyledons. The flesh is white, slightly thick or thick, fine and dense, with fragrance. Shiitake mushrooms also contain more than 30 kinds of enzymes and 18 kinds of amino acids. Among the 8 essential amino acids for human body, shiitake mushroom contains 7 of them, which makes it another preferred food for correcting human enzyme deficiency and replenishing aerobic acid.
