Add 0.03% of Tea Polyphenol Palmitate to 100g margarine, and carry out accelerated oxidation test in 37°C oven, and do blank test at the same time. The peroxide value of the blank sample was lower than that of the margarine with Tea Polyphenol Palmitate at 10~18 d. The analysis suggested that it was probably due to the fact that the margarine was heated while the blank sample was not heated during sample preparation, and the hydrogenated nature of the margarine made the blank sample more stable. The peroxide value of the blank sample increased rapidly after 18 d and rapidly exceeded the peroxide value of the margarine sample with tea polyphenol palmitate, while the peroxide value of the margarine sample with Tea Polyphenol Palmitate increased more slowly, indicating that tea polyphenol palmitate has a significant antioxidant effect in margarine. The optimal amount of Tea Polyphenol Palmitate added to soybean oil was 0.03%. Compared with BHA, BHT, rosemary and Ve, tea polyphenol palmitate has stronger antioxidant properties in soybean oil, and slightly weaker antioxidant properties than TBHQ, but tea polyphenol palmitate is safer. In addition, Tea Polyphenol Palmitate also showed good antioxidant properties in lard and margarine. Tea Polyphenol Palmitate performed very well in lard, only 0.02% was added to fully meet the antioxidant requirements of lard. Compared with synthetic antioxidants TBHQ, BHA and BHT, other natural antioxidants have a huge potential market because of their health concept and no need to be combined with other antioxidants.
